Tiramisu is the Italian dessert par excellence, a masterpiece, as simple to make as it is delicious, based on four main ingredients: mascarpone, eggs, ladyfingers and coffee. This cold dessert is a very successful preparation that presents a remarkable number of variations. This is the traditional version.

- 400 g di mascarpone
- 200 g di ladyfingers
- 150 g di icing sugar
- 200 g di dark chocolate
- 4 egg yolks
- 2 egg whites
- 3 cups of ristretto coffee
- unsweetened cocoa powder
preparazione

To prepare the tiramisu, start with the mascarpone cream.
- Divide the egg yolks from the whites and, in a bowl, beat them until stiff.
- Combine the egg yolks and sugar in another bowl, knead them for a long time with a whisk until the mixture is light and fluffy.
- Gently incorporate mascarpone into this mixture.
- Add the egg whites whipped until stiff to the mixture.

Prepare the base with the Ladyfingers.
- Cover the bottom of a rectangular serving dish with high edges with a layer of ladyfingers and brush them thoroughly with coffee; Alternatively, pass them gently in coffee without soaking them too much before placing them on the plate.
- Cover the ladyfinger layer with a layer of mascarpone cream.
- Repeat the same action until all the ingredients are used.
